Dried Thyme
Dried thyme is a concentrated dried herb with an earthy, resinous aroma. Use less than fresh thyme, crush it lightly before adding, and give it time in warm fat or liquid to release flavor.

Dried thyme is stronger and more brittle than fresh sprigs. Add it early enough to hydrate and mellow, especially in soups and braises. If the leaves smell dusty or flat, replace the jar rather than adding more.
