What It Does
Stovetop cooking uses direct heat from a burner. Watch the sound, steam, browning, and pan temperature, then raise or lower the heat as needed.
Control the burner
The pan tells you when to adjust.
If food steams instead of browning, the pan may be crowded or too cool. If oil smokes or edges darken too fast, lower the heat and keep things moving.
